PRIYA'S PICO DE GALLO

Priya loves to serve this with her homemade chips.


INGREDIENTS:

1 ½ cups tomatoes, diced
1/2 red onion, minced
3 tablespoons chopped fresh cilantro
1/2 jalapeno pepper, seeded and minced
1/2 lime, juiced
1 clove garlic, minced
1 pinch garlic powder
1 pinch ground cumin

Chop everything up and add lime juice and salt to taste.

PRIYA'S HOMEMADE NACHO CHIPS
  • Bag of flour or corn tortillas
  • Vegetable Oil
  • Salt
DIRECTIONS:

Stack up the tortillas and cut in half. Cut the half in half (quarters or wedges or little triangles-resemble a corn chip). Separate the wedges. Heat oil in a pot.  Drop wedges into hot oil.  Deep fry to golden brown. Sprinkle with salt or Tajin (available in Mexican grocery stores-called fruit seasoning-basically chili, lime and salt powder. This stuff is fantastic). Serve with pico.


BOTTLE'S SANGRIA

My best friend who is affectionately known as Bottle (for reasons that are kind of obvious since this is a drink recipe) makes the best sangria. It's fruity and refreshing and punches quite a kick. Please drink responsibly.

  • 1 container limeade concentrate, thawed
  • 1 container orange juice concentrate, thawed
  • 3 bottles of red table wine
  • 1 cup simple syrup (You may not need the simple syrup if you use a really sweet table wine).
  • sliced oranges, limes and lemons
Mix all ingredients together. Serve chilled.
