Chicken Stuffed With Goat Cheese and Basil

This recipe was our take on a Barefoot Contessa receipe.

Ingredients

  • 6 Boneless Skinless Chicken Breast, Butterflied
  • 12 ounces goat cheese, with garlic and herbs
  • Fresh basil leaves
  • Good olive oil
  • Kosher salt
  • Freshly ground black pepper

Directions

Preheat the oven to 350 degrees.
Butterfly the chicken breasts. Spray a foil lined baking sheet lightly with coking spray. Place the chicken breasts on a baking sheet. Cut 12 thick slices of the goat cheese. Place 2 slices of goat cheese and a large basil leaf inside each chicken breast. Rub each piece with olive oil and sprinkle generously with salt and pepper. Bake the breasts for 25 to 30 minutes, until just cooked through. Serve hot or at room temperature.
