GAME DAY GRUB
I love sporting events. I love cooking and planning meals for them as much as I love watching them. This game day, I made sweet and spicy pulled pork sliders, cole slaw and baked potato skins.
SWEET AND SPICY PULLED PORK SLIDERS
Ingredients:
Directions:
Preheat oven (or slow cooker) to 300 degrees. Spray large roasting pan (or slow cooker) with non-stick cooking spray. Chop onions into large chunks and layer in bottom of pan. Liberally season pork butt with salt and pepper. Place on top of onions. Slice garlic and place on top of pork butt. Pour two cups of water (or stock) into roasting pan. Place in oven and cook for 4 hrs. Increase temperature to 350 degrees and cook for 1 - 2 additional hours. Check periodically to make sure there's enough water (you don't have to do this if you use a slow cooker; it creates more juice than in a traditional oven).
Remove from oven and let cool. Use a fork and shred pork.
In a large sauce pan, combine 2 bottles of BBQ sauce, brown sugar and honey. Dice 2 (to 4) chipotle peppers and add to BBQ sauce. Add 1 teaspoon of adobo sauce to BBQ sauce. Stir to combine. (Add more or less chipotle and adobo sauce based on your heat level). Add shredded pork to BBQ sauce and heat through.
Serve on dinner rolls that have been cut in half.
COLE SLAW
These potato skins were perfect with the sliders and slaw!
Ingredients:
Preheat oven to 400 degrees.
Wash and clean potatoes. Lightly prick cleaned potatoes with fork. Place in microwave oven on high for 5 minutes. Check potatoes for doneness. If not continue microwaving on high but check for 45 - 60 seconds for doneness.
Once potatoes are done, remove from microwave. Cut potatoes in half. Sprinkle each potato half with salt and pepper. Cover each potato half with cheese (about 2 tablespoons per half). Then cover each potato half with crumbled bacon.
Place in over for about 5 minutes until cheese is melted. Remove from oven. Garnish with green onions and serve with sour cream.

- 5 pound pork butt
- 2 medium onions chopped
- 4 garlic cloves chopped
- 1 cup water or stock
- 2 - 4 Chipotle Peppers in Adobo Sauce
- 1 teaspoon adobo sauce (from can of chipotle peppers)
- 2 18 ounce bottles BBQ Sauce (I like Sweet Baby Ray's)
- 1/4 cup honey
- 1/2 cup brown sugar
- Salt
- Pepper

Take a short cut from the grocery store and buy the pre-shredded cabbage and carrots. I used the whole bag in this recipe. The slaw was sweet and slightly tangy. It paired beautifully with the sliders.
Ingredients:
- 1 cup mayonnaise
- 1/4 cup ranch dressing
- 1/2 cup sugar
- 1/4 cup cider vinegar
- salt and pepper, to taste
Directions:
Combine all ingredients in a bottom of bowl; whisk to combine. Use tongs to dress shredded cabbage and carrots.

- 4 medium sized potatoes
- 4 slices of cooked bacon crumbled or 1/2 package of real bacon bits
- 1 cup shredded cheese
- Salt and pepper to taste
- Sour Cream
- Green onions for garnish
