KETO LASAGNA

An easy and super tasty lasagna, enjoy all the taste, without the carbs!  Even my picky sons loved this dish. I’ve tried multiple options for a low carb lasagna.  I’ve tried zucchini noodles.  Yuck!  I’ve tried spaghetti squash, still wasn’t what I was looking for.  Then, I discovered konjac noodles and thought this is it!  Sigh, it wasn’t.  After that, I saw a couple YouTube videos and looked into making some kinda cheese noodle in the oven and bake it and cut into strips.  That was a no for me, too much work.  I’ve already got enough to do.  Then, I thought, maybe a low carb taco or pita shell.  That led to cheese slices, then it hit me, deli meat.  Imagine, choirs singing!  Yes, that was it!  Fast, quick and super easy and super tasty.  My husband and sons didn’t even know I substituted the noodles. The Perfect Brunch

Brunch is the perfect meal.  You have the heartiness of breakfast plus the casualness of a great lunch.  You can have breakfast food and dinner food.  In my book, it's a win-win.  I typically host brunch three or four times a year for my family and friends and these are items that frequently make the list. OMELETTE STATION One of the things we often do is have an omelette station.  We provide eggs, various shredded cheeses and veggies. Guests bring various fixings like cubed ham, bacon bits and mushrooms.  We have to skillets going making individual omelettes. HASHBROWN CASSEROLE This really rivals the hashbrown casserole at the Cracker Barrel.  It is sooo good. INGREDIENTS 1 pint sour cream (fat free works well, too) 1 can cream of chicken soup (or cream of mushroom soup for vegetarians) 2 lbs (32 ounces) hashbrown potatoes, thawed 1/2 cup onion, finely chopped 2 cups cheddar cheese 1 teaspoon salt 1/4 teaspoon pepper DIRECTIONS Preheat oven to 350

Slow Cooked Chicken Enchiladas and Sauce

Ingredients 1/4 cup chili powder 4 cups chicken stock 6 ounces tomato paste (1 Can) 1 teaspoon ground cumin 1 teaspoon spanish paprika 1/2 teaspoon chipotle 1/2 teaspoon salt 1/2 teaspoon cocoa powder 1 onion diced 2 pounds boneless skinless chicken thighs Corn shells Shredded Cheese Directions In a bowl combine the first eight ingredients. Whisk until well combined about 1 minute.  Season chicken with salt and pepper (garlic powder, onion powder and Lawry's seasoned salt).  Spray slow cooker with vegetable spray.  Place chicken in slow cooker. Sprinkle diced onions over chicken.  Pour sauce over chicken. Cook on low 4 - 6 hours.  Remove chicken and shred with a fork.  Taste sauce, adjust seasonings if necessary.  (Tip: To thicken sauce, add 2 tablespoons of flour and bring to a boil). Add a few ladles of sauce to the chicken. Set aside. Heat enchiladas.  Dip in sauce.  Assemble enchiladas. Place sauce in bottom of baking dish. Place

THE BIG 5-0, 007 STYLE!

My husband turned 50 last fall and he wanted a big party to celebrate this milestone birthday.  We settled on a 007/Casino Royale theme.  Everything was awesome from the food to the decorations to the casino games.  It was awesome but it took a lot of planning, organizing and help from friends and family.  We pulled off a stellar event.  Here's how we did it. INVITATIONS Since we were doing a 007 themed party, I wanted the invitation to start off that theme.  I had my husband put on his tux, get his little pistol out and we did a photo shoot around the house until we found the perfect picture for the invitation. I created the invitation in Microsoft Publisher and did a "washout" on his picture so it would be in the background.  Here's how it turned out. In case you can't read it, it says.
