LET'S GRILL

HOT AND SWEET STICKY WINGS Great wings, the mustard is a nice balance to the ketchup and brown sugar and the ancho chili powder gives them just enough kick. INGREDIENTS: 5 pound bag of wing dings Salt and Pepper 4 tablespoons vegetable oil 1/2 cup kethcup 4 tablespoons Dijon mustard 2 tablespoons soy sauce 1/2 cup brown sugar 1/2 cup apple cider vinegar 2 teaspoons minced garlic 2 teaspoons minced ginger 1 1/2 tablespoons ancho chili powder 4 tablespoons vegetable oil  Seasoned salt 1 teaspoon ancho chili powder DIRECTIONS: Toss wings with salt, pepper and vegetable oil. Set aside. Combine kethcup, Dijon mustard, soy sauce, brown sugar, apple cider vinegar, garlic, ginger and ancho chili powder in a small pot over medium heat.  Heat until boiling. Once sugar is dissolved remove from heat and stir in oil. Season chicken with seasoned salt and ancho chili powder. Place chicken wings on preheated grill.  Grill for 4 minutes then flip. Repeat for about 16

When I thought about a meal to honor all the father's in my life, I knew meat had to be a big part of the menu and the flavors had to be bold and delicious. What better way to celebrate father's than with an awesome BBQ spread?! PRIYA'S PICO DE GALLO Priya loves to serve this with her homemade chips. INGREDIENTS: 1 ½ cups tomatoes, diced 1/2 red onion, minced 3 tablespoons chopped fresh cilantro 1/2 jalapeno pepper, seeded and minced 1/2 lime, juiced 1 clove garlic, minced 1 pinch garlic powder 1 pinch ground cumin Chop everything up and add lime juice and salt to taste. PRIYA'S HOMEMADE NACHO CHIPS Bag of flour or corn tortillas Vegetable Oil Salt DIRECTIONS: Stack up the tortillas and cut in half. So, it's that's time of the year again, that's right Cinco De Mayo.  It's time to get our party on. As you can tell from the blog, I really like Mexican food.  Here are a couple Mexican inspired dishes that will please your pallet. These are great party recipes. So enjoy your cerveza or sangria and some great Mexican food because it's CINCO DE MAYO! ONE SKILLET SPICY CHICKEN AND RICE    This is an easy and flavorful one dish meal. INGREDIENTS: 6 - 8 pieces chicken skin removed 1/2 tablespoon garlic powder 1/2 tablespoon onion powder 1 teaspoon ground chipotle 2 tablespoons vegetable oil 2 cans undrained tomatoes 1 package 1.25 ounces taco seasoning 1 cup thinly diced celery 1/2 cup diced onion 1 cup minute rice Shredded Cheese Parsley, for garnish DIRECTIONS: Season chicken with garlic powder, onion powder, and chipotle. I know it's probably sounding disingenuous to say I love Chinese food since I've said I love Mexican and Italian, too and I do. Let's just say, I love food. Now that, that's out of the way, let's talk Chinese. I love Chinese and don't always want to get take out so I set out to make my own. I am still perfecting my fried rice recipe so I can't post that yet but I have gotten pretty good at Chicken Egg Rolls, Sesame Chicken and Stir Fry Vegetables.   LORINDA'S CHICKEN EGG ROLLS I served these at a dinner party and my friends and family tore these up.  Everybody had seconds, some people had thirds.  I'm just saying. . . they're good!* INGREDIENTS: 16 ounce bag shredded cole slaw (contains cabbage and shredded carrots) 3/4 cup finely diced mushrooms 1/2 cup chopped bean sprouts 3 cups shredded chicken (cooked) 1/4 cup hoisin sauce Garlic Powder Onion Powder Salt Pepper Vegetable or Canola, for frying 25 - 30 egg roll wrappers

Spring Time Meals

Spring, it's that time of the year again.  The time when the days get longer and the time when we want to lighten up from some of the heavy comfort food we've been eating the last couple of months.  To kick of spring, I came up with three crowd pleasers, my 40 Clove Garlic Chicken, a delicious Black Eyed Pea Salad and Strawberry Cake with Strawberry Cream Cheese Icing. Enjoy! 40 Clove Garlic Chicken This is a simple but extremely tasty chicken dish.  I marinate my chicken over night in herbs, wine, garlic and celery then brown it and slow cook it to perfection. Ingredients 40 garlic cloves, peeled 4 celery ribs, sliced 3 to 4 pounds chicken, cut up and skin removed (either fryer or parts) 1/2 teaspoon salt 1/4 teaspoon pepper 2 tablespoons olive oil 1/4 cup dry white wine or reduced-sodium chicken broth 2 tablespoons sherry Juice and zest of a lemon 2 teaspoons dried basil 2 tablespoons chopped fresh parsley or 2 teaspoons dried parsley Directions Place sherry,
